Whole Tilapia With Onion & Lemon

In this recipe, a whole dressed tilapia is baked on a bed of ginger-spiked onion and lemon slices.


1 1/4 pound red onions, sliced
3 tablespoons lemon juice
1 tablespoon minced ginger
1 whole tilapia (1 1/2 pounds), gutted with head and tail attached
1 tablespoon extra-virgin olive oil
2 large lemons
3 tablespoon minced cilantro
salt and pepper to taste


1. In a large bowl, mix onions, lemon juice and ginger. Reserve a a few slices of onions; arrange the remaining slices over bottom of a 9X13 inch baking pan.

2. Rinse and pat dry the fish. Brush both sides of the fish with oil and place on top of the onions.

3. Cut a 1/2 inch slice from each end of each lemon; stuff fish cavity with lemon ends, reserved onion slices and half the cilantro.

4. Thinly slice remaing of each lemon, tuck slices around fish. Sprinkle remaining cilantro over onion and lemon.

5. Bake in a 400F oven until fish begin to flake (20-25 minutes).
