Chinese Gherkin and Coriander Leaves Soup


This dish will help reducing internal heat and relieving sore throats.

Ingredients:

200 grams white fish fillet
50 grams preserved Chinese gherkin
50 grams coriander leaves
20 grams spring onion
1 slice old ginger, shredded
2 cups boiling water

Marinade for fish:
2 teaspoon salt
1 teaspoon sugar
1 teaspoon light soy sauce
dash of pepper
1 tablespoon oil

Instructions:

1. Rinse the fish fillet and pat dry with kitchen towels. Slice the fish thinly across the grain. Marinate for 5 minutes.

2. Rinse the preserved Chinese gherkins. Shred thinly. Clean and wash the coriander leaves and spring onions. Cut them separately into 2 inch sections.

3. Take a big soup bowl an dmix the marinated fish, shredded ginger, gherkin, spring onion and coriander leaves well
in a bowl.

4. Bring 2 cups of water to a boil in a kettle. Pour the boiling water into the soup bowl of ingredients. Stir thoroughly until the fish is cooked through. Serve
immediately.
