Medieval Ginger Cordial


Ginger makes a good dicongestant for catarrh and sinustis, and an expectornat for cough and chest infections.

Ingredients:

4 ounces dried figs
1/4 teaspoon ground allspice
a few slices of fresh root ginger
1/4 teaspoon ground nutmeg
1 cinnamon stick
2 1/2 cups ginger beer
1 teaspoon lemon juice

Instructions:

1. Stew the figs in enough water to cover them until soft, then blend to a smooth paste.

2. Return to the pan, add the spices and ginger beer and heat slowly, then simmer, covered for 10 minutes. Add the lemon juice. Strain and drink a cupful hot when required.
