Meat Sauce Over Broad Rice Noodle


5 cloves shallots., sliced
3 dried black mushroom, soaked and minced
1/2 pound ground pork

1 tablespoon cooking wine
1 1/2 teaspoons sugar
4 tablespoon soy sauce
1 teaspoon sesame oil
1 cup water

3 pounds broad rice noodles ( strips)
1/2 pound bean sprouts
3/4 ounce carrots ( strips)
1 3/4 ounces Chinese chives ( strips)
4 tablespoon corn oil


1. Heat 4 tablespoons oil in preheated wok. Fry shallots over low heat until fragrant.

2. Add minced mushroom and ground pork; stir-fry until pork changes color. Add (1) and bring to a boil.

3. Reduce heat and simmer for 20 minutes until pork attains meat sauce consistency.

4. Blanch (2) in boiling water until done. Arrange on serving plate. Pour meat sauce over noodles and serve.
