Pineapple Pork Chops


Ingredients:

4 lean pork loin or rib chops, about 1/2 inch thick
2 cloves garlic, finely chopped
1 can ( 8 ounces) crushed pineapple in juice, undrained
1 tablespoon honey mustard
1/4 teaspoon salt

Instructions:

Trim fat from pork. Mix garlic, pineapple and mustard in heavy-duty resealable plastic bag. Add pork, turning to coat with marinade. Seal bag and refrigerate at least 1 hour but no longer than 24 hours.

Remove pork from marinade; reserve marinade. Spray 10 inch non-stick skilet with nonstick cooking spray; heat over medium-high heat. Cook pork in skillet about 6 minutes, turning once, until brown.

Sprinkle with salt and add marinade; reduce heat to low. Cover and simmer about 10-12 minutes or until pork is slightly pink when cut near bone.
