Chinese Pear with Almond Soup
4 Chinese pears
1/2 ounce sweet and bitter almond mixture
1/4 pound spare ribs
1/4 pound lean pork
10 cups water
1 teaspoon salt
1. Wash and cut the pears into quarters or big wedged.
Core, but do not skin. Soak in a light salt solution
for a minute and drain.
2. Scald the spare ribs and lean pork in boiling water for 3 minutes. Rinse and drain.
3. Rinse the almond mixture. Bring the 10 cups of water
to a boil in a pot. Put in all ingredients except the salt,
cover pot and boil for 15 minutes over high heat.
4. Lower heat and simmer for 2 1/2 hours. Add the teaspoon of salt before serving.
