4 ounces shredded reduced-fat Swiss cheese
1/2 onion, finely chopped
8 slices turkey bacon, crisply cooked, drained, and crumbled
1 frozen 9" pie crust, thawed
4 egg whites
12 ounces fat-free evaporated milk
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon ground red pepper
1. Preheat the oven to 425 F.
2. Scatter the Swiss, onion and bacon evenly over the bottom of the pie crust. Add the eggs and egg whites to a medium bowl. Beat lightly.
3. Add the milk, salt, black pepper,and red pepper. Mix well. Pour into the pie crust. Bake for 15 minutes. Reduce the temperature to 300 F. Bake for 30-35 minutes or until a knife inserted in the center comes out clean.
4. Remove from the oven. Allow to stand for 10 minutes. To serve, cut into wedge.
