Cheesy Rice Bake
|
Rice in calcium, mellow Muenster and tangy Monterey jack melt beautifully in sandwiches and casseroles.

Ingredients:
1 teaspoon vegetable oil
1 small onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, diced
1 cup rice
1 1/4 cups chicken broth
1 cup low-fat (1%) milk
1/2 teaspoon salt
1/4 teaspoon black pepper
6 ounces Meunster or Monterey jack cheese, shredded
1/3 cup chopped parsley or cilantro
Instructions:
1. Preheat the oven to 350F. In a casserole, heat the oil over moderate heat. Add the onion and garlic, and saute for 5 minutes or until the onion is soft. Add the bell pepper and cook, stirring frequently for 4 minutes or until firm-tender.
2. Sitr in the rice. Add the broth, milk, salt and black pepper, and bring to a boil. Stir in the cheese, cover tightly, and place in the oven for 25 minutes or until rice is tender. Stir in the parsley.
