Ginger Chicken Salad with Ogen Melon and Celery


Ingredients:

2 tablespoons olive oil
2 celery stalks, finely chopped
2 shallots, roughly chopped
1/2 teaspoon cayenne pepper
1 ogen or honeydew melon
1 free-range chicken, cooked
4 tablespoons homemade mayonnaise
6 tablespoons soured cream
6 pieces crystallized ginger, chopped
green salad leaves, such as rocket and herbs, to serve

Instructions:

1.Heat the olive oil in a pan, then add the celery and shallots and
gently saute until soft. Stir in the cayenne pepper. Let cool, then
chill.

2.Cut the melon in half, remove and discard the seeds and cut
the flesh into cubes with a knife. Shred the chicken into bite-
sized pieces and place in a bowl. Add the melon, celery and
shallots, then stir in the mayonnaise, soured cream and ginger.

3.Place the leaves on a salad platter, spoon on the chicken
sprinkle with chopped herbs and serve.
