Tuna Salad Sandwiches

Quick and easy healthy sandwich fix.

Ingredients:
1/2 cup reduced-fat mayonnaise
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 can ( 6 oz) water packed tuna, drained
1 rib celery, finely chopped
1 small onion, finely chopped
1/2 cup chopped tomato
8 slices whole-grain bread
Instructions:
1. In a medium bowl. Combine the mayonnaise, lemon
juice, salt, and pepper.
2. Add the tuna, celery, and onion. Mix well. Add the tomato and fold gently into tuna mixture.
3. Spread the tuna mixture evenly on 4 bread slices. Top with the remaining slices.
4. Cut each sandwich in half diagonally.
