Chicken Steaks with Orange
Use grated orange peel to enhance flavor, remove and discard the bitter, inner white peel, also remove and discard bitter seeds after dicing.
2 chicken thighs
2 ginger slices
(A): 1 tablespoon cooking wine
2 tablespoons soy sauce
1 tablespoon cornstarch water
(B): 2 tablespoon red wine
2 tablespoon ketchup
1 teaspoon salt
1 tablespoon sugar
pepper as needed
1. Bone chicken, score on surface, halve each piece, marinate in
seasoning (A) with ginger for 10 minutes.
2. Squeeze orange juice out of one orange, peel the other, dice, grate
orange peel on grater.
3. Wrap chicken on foil, bake in oven at 200'C for 20 minutes,
4. Combine seasoning (B) with orange juice well, brush on
chicken and bake until flavor is absorbed and done, remove,
arrange on plate; stir-fry diced oranges and remaining liquid with
2 tablespoons oil, mix well and drizzle on chicken. Serve.
