Oven-Fried Chicken


Ingredients:

6 - 8 chicken thighs, skinned
2 cups plain yogurt
1 cup seasoned bread crumbs or crushed cornflakes
2 teaspoons olive oil
4 baking potatoes, scrubbed and cut in half

Instructions:

1. Preheat oven to 350'F. Rinse and pat dry the chicken. Roll in the
yogurt, coating the chicken generously.

2. Dip in the bread crumbs or cornflakes. Place on lightly oiled baking
dish. Add potatoes. Drizzle the chicken and potatoes with oil. Bake 45 minutes.

3. Chicken should be crispy and potatoes tender when pierced
with fork.
