Turkey Vegetable Soup


Ingredients:

Vegetable oil spray
1 pound ground turkey
1 small onion, chopped
2 can beef broth
1 32-ounce can chopped tomatoes
2 cups cubed potatoes, about 1 pound
1 cup chopped carrots
1/2 diced celery
1 bay leaf
6 whole peppercorns

Instructions:

1. Lightly coat a large heavy soup pot with vegetable oil. Saute the
turkey along with the onion and 1 tablespoon of the beef broth
for 2-3 minutes or until onion is translucent and soft.

2. Stir in remaining ingredients. Cook on medium high heat until it almost
comes to a boil. Reduce heat to low, cover and simmer at least
20 minutes. Serve hot.
