White Fungus with Mixed Fruits


This dessert helps lubricate lung and clean toxins.

Ingredients:

2 ounces white fungus
6 cups water
2 ounces rock sugar
3 screwpine ( pandan) leaves
10 ounces ripe loquats, apricots, mangoes or
peaches, pitted and sliced

Instructions:

1. Soak white fungus in warm water to cover, until
completely soft. Remove all foreign matter and drain.

2. Combine white fungus, water, sugar and screwpine leaves, and bring to a boil. Reduce heat and simmer for 40 minutes uncovered, then cover and simmer an additional 20 minutes over lowest heat.

3. Add sliced fruit, and gently simmer for an additional 5 minutes. Remove from heat, remove screwpine leaves, and serve either hot or chilled.
