1 1/2 cups plain bran flakes
1 1/4 cups skim-milk
3/4 cup all purpose flour
3/4 cup wholewheat flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons soy oil
1/4 cup unsulphured molasses (available in health food stores).
1 tablespoon honey
1 egg, lightly beaten
24 muffin cups,oiled, or muffin pans, oiled
1. Preheat oven to 205 C (400 F ). Combine bran flakes
and milk; let stand 10 minutes.
2. In another bowl, combine flours, baking powder and salt. In a third bowl, combine the oil molasses, honey and egg, and blend in the bran and milk mixture. Mix well.
3. Add the flour mixture to the bran mixture, stirring just long enough to thoroughly moisten. Do not over-mix, or muffins will be full of tunnels and holes.
4. Fill muffin tins or prepared muffin cups 2/3 full and bake for 20-30 minutes.
