Steamed Threadfin with Mushrooms and Carrots

Ingredients:

600 gm threadfin
3 pips garlic
25 gm ginger
50 gm carrot, sliced thinly
2 tbsp soya sauce
1 tbsp oyster sauce
1 tsp sugar
½ tsp pepper
I tsp sesame oil

Mushroom seasoning
10 shitake mushrooms, soaked in water and drained
I tbsp oyster sauce
1 tsp sugar
I tsp cooking oil
½ tsp corn flour


Instructions:

1. Clean the threadfin, and slice five diagonal lines into each side of the fish. Set aside on a steaming plate.

2. For the mushroom seasoning, mix the mushrooms with the oyster sauce, sugar, cooking oil and corn flour. Mix thoroughly and set aside.

3. Pound the ginger and garlic together with the soya sauce, oyster sauce, sugar, pepper and sesame oil and set aside. This is the sauce for the fish.

4. Stuff the slits in the fish with mushrooms and carrots and then pour the sauce on top of the fish.

5. Bring 3 cups of water to boil in a wok. Place a steaming tray inside and steam the fish for 1 5 minutes. Serve hot.

Tips: The key to perfectly steamed fish is to cover the pot tightly and steam for the exact length of time. Never overcook a fish!
