Light Ice Cream Sandwiches


These perfectly irresistible healthy recipe

Ingredients:

8 large ( 2 1/2 X 5 inch ) reduced fat chocolate graham crackers
2 cups nonfat or low-fat ice cream, any flavor, slightly softened

Instructions:

Break each graham cracker in half so that you have 16 squares, each measuring 2 1/2 X 2 1/2 inches. Spread 1/4 cup of the ice cream over 1 square, top with another square, and gently press the crackers together.

Smooth the edges of the ice cream with a knife. Wrap the sandwich in plastic wrap, and place in the freezer. Repeat with the remaining ingredients to make 8 sandwiches.

Freeze the sandwiches for at least 1 hour before serving.
