Gingered chicken kebabs
1 tablespoon grated, peeled ginger root
1 clove garlic, pressed
1 teaspoon sesame oil
Juice of 1 large lime
1/2 pound skinless and boneless chicken breast, fat
removed, cut into 1 inch chunks
8 cherry tomatoes
1 medium green bell pepper, cut into 8 strips
Combine ginger, garlic, oil and lime in a bowl. Mix thoroughly. Add chicken and toss to coat. Refrigerate and let marinate for 30 minutes, turning once or twice in the marinade.
Preheat oven to broil. Dividing portions equally, thread chicken, tomatoes, and pepper strips onto four skewers. Place skewers on a broiling pan and spoon marinade over all.
Broil, turning skewers twice, for 8 to 10 minutes or until chicken is lightly browned and cooked through. Place skewers on platter and serve.
