Shrimp Salad on Pineapple Relish

Very appetizing salad with chilled pineapples, shrimps and fresh lime juice.


2 cups fresh pineapple, diced
1 tablespoon lime juice
1 pound peeled cooked shrimp
1 red bell pepper, seeded and diced
2 scallions, thinly sliced
1/4 cup reduced-fat mayonnaise
1 small jalapeņo or other hot pepper, seeded and minced


1. In a bowl, combine pineapple, lime juice, minced jalapeņo and salt to taste. Chill until serving time.

2. In a separate bowl, combine shrimp, bell pepper, scallions, mayonnaise and a generous grinding of black pepper. Add 1 - 2 tablespoons juice from the pineapple relish. Toss well to coat.

3 Place pineapple relish in a shallow serving dish. Top with shrimp salad.
