Sweet Soybean Sticks Dessert
2-3 dried soybean sticks about 150 grams
40 gingko nuts
5 ounces rock sugar
6 1/2 cups water
1. Soak soybean sticks in water until soft and cut into
2 inches pieces. Wash and drain.
2. Prepare gingko nuts as normal and soak in water for a few minutes.
3. Combine all ingredients except eggs and simmer for
2 hours, Just before serving, crack eggs in a bowl
and swirl into soup. Stir gently to break yolk. Serve
hot or cold.
