Spareribs Cooked with Papaya

Papaya is rich in all kinds of vitamins, minerals, fibre, and fruit sugar. It is a wonderful summer fruit.

Ingredients:

1/2 green papaya
1 1/2 pound spareribs
2 spring onions
2 slices ginger

Seasoning:
(1)
3 tablespoon soysauce
1 tablespoon rice wine
1 tablespoon rock sugar

(2)
1 teaspoon cornflour
1 teaspoon sesame oil

Instructions:

1. Peel and de-seed the papaya, dice into square piece.

2. Cut the spareribs into bite pieces. Heat 1/3 cup oil in
a wok, quick fry the spring onion and ginger, add the
rock sugar, keep frying till the ingredients turn brown.

3. Add the spareribs, fry till the skin turns yellow. Add
seasoning (2), and papaya into wok, stir a bit then add
water till all the ingredients are covered, put the lid on
and cook on low heat for 45 minutes. Thicken with
cornflour and add some sesame oil.
