Lemon Broiled Salmon with Lentils


Ingredients:

3/4 cup lentils
3 cups Vegetable Stock or mushroom broth
1 ounce dried shitake mushroom, broken into small pieces
2 tablespoons sherry or Marsala
1/4 teaspoon salt
Freshly ground black pepper
1 small onion, chopped
4 4 ounces each 1/2 lemon

Instructions:

1. Pick over lentils to remove any small stones or broken lentils. In a large saucepan, combine lentils, broth, dried mushrooms, mirin (or sherry or Marsala), salt and a grinding of pepper. Bring the liquid to a boil, cover and cook until the lentils are tender, about 25 minutes.

2. While the lentils are cooking, preheat the broiler. Spray the broiler pan with cooking spray.

3. Season salmon with salt and pepper. Place on prepared broiler pan. Broil fish for 8 to 10 minutes, until cooked through.

4. Spoon lentils onto each of 4 dinner plates. Set the salmon on top and sprinkle with lemon juice.
