Chicken with Four Precious Herbs


This dish is good for invigorating blood circulation, thereby giving a beautiful and glowing comple-xion. It is also to be effective in controlling menstrual flow.

Ingredients:

1 chicken thigh, ( 200 grams)
10 grams zizyphus
10 grams polygomun/ multiflower knotweed
10 grams dioscorea / chinese yam
10 grams medlar seeds
3 cups hot water
1/2 teaspoon salt

Instructions:

1. Clean and wash chicken thigh. Trim off excess fat. Skin if required. Keep thigh whole. Scald in boiling water for a minute. Rinse and drain.

2. Rinse all the herbs briefly. Drain. Put the scalded chicken thigh and herbs into a double- boiler with 3 cups of hot water.

3. Cover and bring contents to a boil. When the liquid is boiling, lower the heat to medium and continue to double-boil for 3 hours. Add the salt just before serving.

4. Serve the tonic hot. The chicken thight may be eaten,
but discard the herbs.
