Lotus Seeds and Barley Delight


This dessert helps constipation and nourish Spleen.

Ingredients:

5 ounces lotus seeds
2 ounces pearl barley
1 cup fresh milk
4 cups water
2 tablespoon honey

Instructions:

1. Bring 4 cups of water to a boil.

2. Put in the lotus seeds, continue boiling over medium heat for an hour.

3. Drain and rinse lotus seeds under cold running water. Rub the skin off and soak the lotus seeds in cold water. Drain before use.

4. Put in the barley, lower heat and simmer for 15 minutes or
until the barley grains are slightly open and the liquid reduced to 3 cups of thick barley water.

5. Combine the lotus seeds and barley water and bring the mixture to a boil. Lower heat and simmer for 1 hour or until the
lotus seeds are tender.

6. Add the fresh milk to the mixture and bring to a boil slowly over low heat. Allow to cook for 2 minutes. Stir occasionally.

7. Turn off the heat and leave the dish to cook for a while. Include the honey,mix well and serve warm.
