Lotus Root and Black Bean Soup


Both lotus roots and black bean is said to nourish the blood. Red bean can be use instead of black bean.

Ingredients:

2 lotus root
1/2 pound lean pork
1/2 cup black bean
10 cups water

Instructions:

1. Rinse lotus roots well. Cut the roots into sections near the joints to reveal holes in the tuber. Discard joints.

2. Scald the pork in boiling water 2 minutes. Rinse and drain.

3. Bring 10 cups of water to boil. Include all the ingredients, cover the pot and boil over high heat for 15 minutes. Bring the heat to low and simmer gently for 3 hours.

4. Season with a teaspoon of salt before serving. Cut the cooked lotus roots into thick slices. Serve the soup and cooked ingredients separately. Serve hot.
