Simmered Eggplant with Sesame Oil


Eggplants are rich in Calcium, Magnesium, Iron, Vitamins A and C.

Ingredients:

2 eggplants (14 ounces)
6 cups water

Seasoning:
1 teaspoon salt
1 teaspoon oil

Sauce ingredients:
1 tablespoon chopped garlic
1 teaspoon salt
1 teaspoon light soysauce
1/2 teaspoon dark soy sauce
1 teaspoon sesame oil
1 tablespoon oil
dash of pepper powder

Instructions:

1. Rinse the eggplants. Do not remove stalks and skin.

2. Bring 6 cups of water to a boil. Add seasoning. Put
eggplants in the boiling water, cover the pot and leave
to simmer over medium heat for 15 minutes.

3. Ladle out and drain . Arrange on a serving plate. Mix the sauce ingredients in a bowl.

4. Split open of the eggplant starting near the stalk. Pour
sauce on the eggplants and serve immediately.

Prep/Cooking Time:

10 minutes.
