Peas & Cheese Salad
|
Fresh peas are a good low-fat protein source. They are rich in vitaminC, folate, manganese, potassium, and thiamin and also contain lutien.

Ingredients:
1 cup plain nonfat yogurt
1/3 cup light mayonnaise
3/4 teaspoon grated lemon zest
3 tablespoons lemon juice
2 cups shredded romaine lettuce
4 cups frozen peas, thawed
1 large red bell pepper, diced
1 large yellow bell pepper, diced
1 large red onion, diced
3/4 cup shredded Cheddar cheese (3 ounces)
Instructions:
1. In a samll bowl. combine the yogurt, mayonnaise, lemon zest and lemon juice; set aside.
2. In an 8 to 10 cup glass bowl, mix the remaining ingredients. Pour the yogurt mixture on top and sprinkle with cheese. Cover well and refrigerate for at least 4 hours.
3. At serving time, toss the salad at the table.
Prep/Cooking Time:
20 minutes, chill for 4 hours
